[ ] 1 cup chickpeas, cooked
[ ] 2 cups cooked rice, white or brown
[ ] 1 pound mushrooms, chopped
[ ] 1 small onion, chopped
[ ] 3 cloves garlic, minced
[ ] 2 tablespoons olive oil
[ ] 1 cup coconut milk
[ ] 1 cup vegetable broth
[ ] 2 tablespoons nutritional yeast
[ ] 10 ounces spinach, fresh or frozen
[ ] Salt and pepper to taste
[ ] 1 teaspoon smoked paprika

Instructions
[ ] 1. Preheat the oven to 350 degrees F (175 degrees C).
[ ] 2. In a large skillet, heat olive oil over medium heat. Add the onions, garlic, and mushrooms, cooking until the onions are soft and the mushrooms are browned, about 10 minutes.
