Ingredients
[ ] 1 cup long-grain white rice
[ ] 8 oz firm tofu, minced
[ ] 1/2 oz dried porcini mushrooms
[ ] 1/4 cup raw cashews
[ ] 1 cup tomato sauce
[ ] 3 cloves garlic, minced
[ ] 2 cups vegetable broth
[ ] 2 tablespoons nutritional yeast
[ ] 1 teaspoon ground cumin
[ ] 1/4 cup fresh cilantro, chopped
[ ] 1 tablespoon olive oil
[ ] 1/2 teaspoon salt (reduced)
[ ] 1/4 teaspoon black pepper
[ ] 1/2 small onion, diced

Instructions
[ ] 1. Soak the dried porcini mushrooms and raw cashews together in 1 cup of hot water for 10 minutes until rehydrated. Drain, reserving the soaking liquid if desired for extra flavor.
[ ] 2. Dice the rehydrated porcini mushrooms and crush the cashews into small pieces. Set aside.
[ ] 3. Heat 1 tablespoon olive oil in a large skillet or saucepan over medium heat. Add the minced firm tofu and cook for 3–4 minutes until lightly browned.
[ ] 4. Add the diced onion and minced garlic to the pan and sauté for 2 minutes until fragrant.
[ ] 5. Stir in the long-grain rice and toast for 2 minutes, stirring frequently.
[ ] 6. Add the diced porcini mushrooms, crushed cashews, 1 cup tomato sauce, 2 cups vegetable broth, 2 tablespoons nutritional yeast, 1 teaspoon cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Stir well to combine.
[ ] 7. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes until the rice is tender and the liquid is absorbed.
[ ] 8. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork, stir in 1/4 cup fresh chopped cilantro, and serve.
