Feta-stuffed Cannellini Nut Roast

Ingredients
[ ] 3 tbsp olive oil, plus extra for the tin and for drizzling
[ ] 1 celery stick, finely chopped
[ ] 2 leeks, halved and sliced
[ ] 100g cooked quinoa
[ ] 3 tbsp za'atar
[ ] 50g fresh breadcrumbs
[ ] 100g green lentils
[ ] 6 pieces figs
[ ] 20mg dry blueberries
[ ] 20mg dry raspberry
[ ] 20mg dry grapes
[ ] 1 tsp dry oregano
[ ] 1 tsp dry mint
[ ] 1 tsp sage
[ ] 1 white onion
[ ] 20mg crushed walnuts
[ ] 20mg cashew
[ ] 20mg almonds
[ ] 100g cannellini beans, mashed
[ ] 100g vegan feta cheese, crumbled.

Instructions
[ ] 1. Preheat the oven to 180C (350F). Grease a loaf tin with olive oil and line with parchment paper.
[ ] 2. Heat 3 tbsp of olive oil in a large pan over medium heat. Add the celery, leeks, and onion, and cook until softened.
[ ] 3. In a large bowl, combine the cooked quinoa, za'atar, breadcrumbs, lentils, figs, dried berries, herbs, nuts, mashed cannellini beans, and crumbled vegan feta. Mix well.
[ ] 4. Transfer the mixture to the prepared loaf tin, pressing down firmly. Drizzle with a little extra olive oil.
[ ] 5. Bake for 45-60 minutes, or until golden brown and firm to the touch.
[ ] 6. Let cool slightly before slicing. Serve with a side of roasted vegetables or a fresh salad.
