[ ] 3 cloves garlic, minced
[ ] 1 medium yellow onion, diced small
[ ] Salt and pepper, to taste
[ ] 1 can (28 ounces) whole peeled tomatoes, pureed
[ ] 1 pound quartered cremini mushrooms
[ ] 1/2 teaspoon dried thyme
[ ] 1/3 cup dry white wine
[ ] Fresh parsley, chopped for garnish

Instructions
[ ] 1. Heat olive oil in a large skillet over medium heat. Add the minced garlic and diced onion, and cook until the onion is translucent, about 5 minutes.
[ ] 2. Add the quartered mushrooms and cook, stirring occasionally, until they release their moisture and start to brown, about 7-10 minutes.
[ ] 3. Season with salt, pepper, and dried thyme. Pour in the dry white wine, stirring to deglaze the pan. Allow the wine to reduce by half, about 2-3 minutes.
