Ingredients [ ] 500g white beans (or 3 cups cooked canned white beans) [ ] 4 vegan sausages [ ] 2 vegan pork chops or jackfruit chunks [ ] 1 carrot, chopped [ ] 2 onions, chopped [ ] 2 cloves garlic, minced [ ] 1 bay leaf [ ] 1 pinch salt and pepper [ ] 1 tablespoon olive oil [ ] 4 vegan duck legs (or seitan) [ ] 1 tablespoon tomato paste [ ] 1 bouquet garni Instructions [ ] 1. **For Dry Beans**: Soak the white beans overnight in a large bowl of cold water. On the day of cooking, drain and rinse the beans, then place them in a large pot with half the chopped onions, garlic, and enough water to cover them. Bring to a boil and cook for 20 minutes. Set aside. [ ] 2. **For Canned Beans**: Drain and rinse the canned beans and set them aside. Begin with Step 3. [ ] 3. In a large pot, heat olive oil. Brown the vegan sausages and set them aside. [ ] 4. Add the remaining onions, carrot, vegan pork or jackfruit, and vegan duck to the pot and cook for 15 minutes until browned. [ ] 5. Add the white beans, bay leaf, bouquet garni, and tomato paste. Cover and cook for 30 minutes. [ ] 6.
