[ ] 1 ¾ cups (420 mL) plain-flavored soy milk mixed with 1 ½ tablespoons lemon juice
[ ] 2 cups (250g) gluten-free all-purpose flour
[ ] 2 tablespoons (25g) baking powder
[ ] ½ teaspoon sea salt
[ ] 2 tablespoons organic cane sugar
[ ] 1 teaspoon vanilla extract
[ ] 3 tablespoons (42g) vegan butter, melted
[ ] Refined coconut oil, for cooking
[ ] Fresh berries and sliced fruit for garnish

Instructions
[ ] 1. Prepare the vegan buttermilk by combining lemon juice and soy milk. Let it sit for a few minutes until it curdles.
