[ ] 1 medium sweet potato or baking potato, Salt and freshly ground black pepper, 1/2 cup firm tofu (crumbled), 2 tbsp nutritional yeast, 2 tbsp vegan mayo, 1 tbsp fresh parsley (chopped), 1/2 tsp paprika

Instructions
[ ] 1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
[ ] 2. Wash and scrub the sweet potato or baking potato, then cut it into wedges.
[ ] 3. Place the potato wedges on the prepared baking sheet, season with salt and freshly ground black pepper.
[ ] 4. Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and golden brown.
