[ ] 1 tbsp. diced pimentos
[ ] 1 tbsp. grated onion
[ ] 1/2 tsp. white miso
[ ] 1/2 tsp. worcestershire sauce (vegan)
[ ] 1/4 tsp. cayenne pepper
[ ] Kosher salt and freshly ground black pepper, to taste
[ ] 1 1/2 lb. vegan ground beef substitute, formed into 4 medium-size patties
[ ] 4 hamburger buns, toasted
[ ] Iceberg lettuce, for garnish
[ ] 4 slices tomato, for garnish
[ ] 1 cup mushrooms, sliced
[ ] 1/4 cup BBQ sauce
[ ] 1 tbsp. maple syrup
[ ] 1 tbsp. soy sauce
[ ] 1/2 tsp. smoked paprika
[ ] 1/4 tsp. garlic powder.

Instructions
[ ] 1. Prepare the Pimento Cheese: In a bowl, combine the grated vegan sharp cheddar cheese, vegan mayonnaise, diced pimentos, grated onion, white miso, vegan Worcestershire sauce, cayenne pepper, salt, and black pepper. Mix until well combined. Set aside.

[ ] 4. Assemble the Burgers: Spread a generous amount of the pimento cheese mixture on the bottom half of each toasted bun. Place a vegan burger patty on top, add a spoonful of BBQ mushrooms, and top with a slice of tomato and some iceberg lettuce. Cover with the top half of the bun.
[ ] 5. Serve immediately, and enjoy your Vegan Pimento Cheese Burger with BBQ Mushrooms!
