Roast Mushroom Gnocchi

A delicious and comforting vegan roast mushroom gnocchi made with hearty mushrooms, fresh gnocchi, and a creamy plant-based blue cheese sauce. Perfect for a cozy meal.

Ingredients
[ ] 250g mushrooms, 500g fresh gnocchi, 3 tbsp olive oil, plus extra for drizzling, 160g bag spinach, 100g vegan blue cheese

Instructions
[ ] 1. Preheat the oven to 200C (390F).
[ ] 2. Toss the mushrooms with olive oil, salt, and pepper, and spread them on a baking sheet. Roast for 15 minutes.
[ ] 3. Cook the gnocchi according to package instructions, then drain.
[ ] 4. In a large skillet, heat the remaining olive oil over medium heat. Add the spinach and cook until wilted.
[ ] 5. Add the roasted mushrooms, gnocchi, and crumbled vegan blue cheese to the skillet. Stir until the cheese is melted and everything is well combined.
[ ] 6. Serve hot, drizzled with extra olive oil if desired.
