Pressed tofu marinated in smoked paprika and tamari, threaded with peppers and red onion, then grilled and finished with homemade miso mayonnaise marmalade.

Ingredients

560 g firm tofu, pressed and cut into 3 cm cubes; 2 tbsp tamari; 1 tbsp maple syrup; 2 tsp smoked paprika; 1 tsp garlic powder; 1 tbsp rice vinegar; 1 tbsp toasted sesame oil; 1 red pepper, cut into 3 cm pieces; 1 orange pepper, cut into 3 cm pieces; 1 red onion, cut into wedges; 1 tbsp black sesame seeds; 6 tbsp Homemade Miso Mayonnaise Marmalade (see sub-recipe); 8 wooden skewers, soaked for 30 minutes

Instructions

Press the tofu for at least 20 minutes to drive off water, then cut into cubes.; Whisk the tamari, maple syrup, smoked paprika, garlic powder, rice vinegar and sesame oil into a marinade. Turn the tofu through it and leave for 20 minutes, or up to 4 hours in the fridge.; Prepare the Homemade Miso Mayonnaise Marmalade while the tofu marinates.; Thread the tofu onto the soaked skewers, alternating with pepper pieces and onion wedges.; Grill over direct medium heat for 12-15 minutes, turning every 3 minutes and brushing with the remaining marinade, until the tofu is lacquered and the edges are charred.; Scatter with black sesame seeds and serve with the miso mayonnaise marmalade spooned over or alongside.
