Ingredients
[ ] 1 14-oz. block extra-firm tofu, drained
[ ] 3 Tbsp. vegetable oil, divided
[ ] 12 oz. mixed mushrooms (such as maitake, shiitake, and/or oyster), stems trimmed, torn into 2" pieces
[ ] 3 celery stalks, thinly sliced on a diagonal
[ ] 1 2" piece ginger, peeled, thinly sliced
[ ] 1 serrano chile, thinly sliced
[ ] 3 Tbsp. low-sodium soy sauce
[ ] 1 tsp. toasted sesame oil
[ ] Kosher salt
[ ] 1 lime, halved
[ ] cup coarsely chopped cilantro
[ ] Cooked short-grain rice (for serving).

Instructions
[ ] 1. Press the tofu to remove excess water, then cut into cubes.
[ ] 2. Heat 1 Tbsp. vegetable oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden brown on all sides. Remove from the skillet and set aside.
[ ] 3. In the same skillet, add the remaining vegetable oil. Add the mushrooms and cook until browned and tender.
[ ] 4. Add the celery, ginger, and serrano chile to the skillet. Stir-fry for 2-3 minutes until fragrant.
[ ] 5. Return the tofu to the skillet. Add the soy sauce, toasted sesame oil, and a pinch of kosher salt. Stir to coat everything evenly.
[ ] 6. Squeeze lime juice over the mixture and sprinkle with chopped cilantro.
[ ] 7. Serve hot over cooked short-grain rice.
