[ ] 1 large onion, chopped
[ ] 6 garlic cloves, minced
[ ] 1 red or yellow capsicum, chopped
[ ] 1 carrot, chopped
[ ] 1-2 tbsp Thai red curry paste
[ ] 1.7l vegetable stock
[ ] 200ml coconut milk
[ ] 1 small chili pepper, chopped
[ ] 1 lemon, juiced
[ ] Ground cumin
[ ] Black pepper
[ ] Salt
[ ] Chopped parsley
[ ] Chopped spring onions, to serve (optional)

Instructions
[ ] 1. Heat olive oil in a large pot over medium heat.
[ ] 2. Add the chopped onions, garlic, and chili pepper, sautéing until onions are translucent.
[ ] 3. Stir in the Thai red curry paste and cook for another minute.
[ ] 4. Add the chopped capsicum and carrot, and sauté for a few minutes.
[ ] 5. Pour in the red lentils, vegetable stock, and bring to a boil.
[ ] 6. Reduce heat and simmer for 30 minutes, or until lentils are tender.
