Ingredients
[ ] 1½ cups cashews, soaked for at least 1 hour and drained
[ ] 1 orange pepper, roughly chopped
[ ] 1 cup unsweetened dairy-free milk (almond)
[ ] 2 teaspoons chilli powder
[ ] ¼ cup nutritional yeast
[ ] ½ teaspoon salt
[ ] 2 tablespoons taco seasoning
[ ] 2 x 15 oz tins black beans, rinsed and drained
[ ] 12 oz fresh salsa
[ ] Fresh coriander, to garnish (optional)
[ ] Sliced spring onions, to garnish (optional)

Instructions
[ ] 1. Add the soaked and drained cashews, chopped orange pepper, dairy-free milk, chilli powder, nutritional yeast, and salt to a high-speed blender.
[ ] 2. Blend on high until completely smooth and creamy, stopping to scrape down the sides as needed, 2–3 minutes.
[ ] 3. Pour the cashew cheese sauce into a large saucepan and place over a medium heat.
[ ] 4. Stir in the taco seasoning until well combined.
[ ] 5. Add the black beans and fresh salsa to the saucepan, stirring gently to incorporate.
[ ] 6. Continue cooking for 10–15 minutes, stirring occasionally, until the dip is heated through and the flavours have melded together.
[ ] 7. Transfer the warm dip to a serving bowl.
[ ] 8. Garnish with fresh coriander and sliced spring onions if desired, and serve immediately with tortilla chips, vegetable crudités, or warm flatbreads.
