Ingredients [ ] 1 tablespoon extra-virgin olive oil [ ] 1/2 yellow onion, diced [ ] 1 red pepper, diced [ ] 1/2 jalapeño, deseeded and finely chopped (optional) [ ] 1 teaspoon ground cumin [ ] 1 teaspoon garlic powder [ ] 1/2 bunch kale, stalks removed, leaves shredded [ ] 2 cups cooked brown rice [ ] 1 (15-ounce / 425 g) tin of black beans, rinsed and drained [ ] 3 tablespoons chopped fresh coriander [ ] Sea salt, to taste [ ] Freshly ground black pepper, to taste [ ] 1 ripe avocado, diced [ ] 1 lime, cut into wedges Instructions [ ] 1. Heat 1 tablespoon extra-virgin olive oil in a large non-stick frying pan or cast-iron skillet over a medium heat. [ ] 2. Add the diced onion and diced red pepper and cook, stirring occasionally, for 5–6 minutes until softened and lightly golden at the edges. [ ] 3.
