Ingredients [ ] 450 g (1 lb) green beans, trimmed and cut into bite-sized pieces [ ] 200 g chestnut mushrooms, roughly chopped [ ] 240 ml (1 cup) unsweetened oat milk [ ] 1 tbsp soy sauce [ ] ½ tsp freshly ground black pepper [ ] ½ tsp salt [ ] 1 tbsp olive oil [ ] 2 cloves garlic, minced [ ] 1 tbsp plain flour (to thicken the sauce) [ ] 100 g crispy fried onions (ensure vegan — check packaging) Instructions [ ] 1. Preheat your oven to 180 °C (160 °C fan) / 350 °F / Gas 4. [ ] 2. Bring a large pot of salted water to the boil. Add the green beans and cook for 5 minutes until just tender but still with a little bite. Drain and set aside. [ ] 3. Heat the olive oil in a medium saucepan over a medium heat. Add the garlic and cook for 1 minute until fragrant. [ ] 4. Add the chopped mushrooms and cook for 5–6 minutes, stirring occasionally, until they have released their moisture and are soft and golden.
