Slice the carrots into ¼-inch rounds, cut the cauliflower into bite-sized florets, slice the jalapeños into rounds, and peel the garlic cloves, leaving them whole. Set everything aside. Pour 1½ cups apple cider vinegar and 3 cups water into a medium saucepan and place over medium heat. Add the 1½ cups carrot slices and 2½ cups cauliflower florets to the simmering brine. Cook for 5–7 minutes, until the vegetables are just tender but still retain a pleasant crunch. Leave the jar(s) uncovered at room temperature until completely cool, then seal tightly with a lid and refrigerate for at least 2 hours before serving to allow the flavours to develop fully.
