Grilled Peach Salad with Vegan Halloumi and Dukkah

Ingredients
[ ] 400g firm tofu, pressed and cut into 1cm slices
[ ] 2 tbsp nutritional yeast
[ ] 1 tbsp cornstarch
[ ] 2 tbsp lemon juice, divided
[ ] 3 ripe peaches, halved and pitted
[ ] 100g rocket (arugula)
[ ] 15g fresh mint leaves, torn
[ ] 2 tbsp dukkah (Egyptian nut and spice blend)
[ ] 1 green chile, thinly sliced
[ ] 3 tbsp extra virgin olive oil, divided
[ ] 1 tbsp Dijon mustard
[ ] 1 tbsp maple syrup
[ ] Sea salt and black pepper to taste

Instructions
[ ] 1. Press the tofu between paper towels to remove excess moisture, then cut into 1cm thick slices.
[ ] 2. In a shallow dish, whisk together the nutritional yeast, cornstarch, 1 tbsp lemon juice, and a pinch of salt. Coat the tofu slices in the mixture, ensuring all sides are covered.
[ ] 3. Heat 1 tbsp olive oil in a grill pan or skillet over medium-high heat. Add the coated tofu slices and sear for 3–4 minutes per side until golden brown and crispy. Remove and set aside.
[ ] 4. In the same pan, place the peach halves cut-side down and grill for 2–3 minutes until caramelized with grill marks. Remove and cut each half into wedges.
[ ] 5. In a small bowl, whisk together the remaining 2 tbsp olive oil, 1 tbsp lemon juice, Dijon mustard, maple syrup, and salt and pepper to taste to make the dressing.
[ ] 6. Arrange the rocket on a large serving platter. Top with the grilled peach wedges and torn mint leaves.
[ ] 7. Break the seared tofu halloumi into pieces and scatter over the salad.
[ ] 8. Drizzle the lemon-Dijon dressing over everything, then sprinkle with dukkah and sliced green chile. Serve immediately while the tofu and peaches are still warm.
