Ingredients [ ] 2 large fresh mangoes (diced) [ ] 1 cup fresh tomatoes (diced, about 2–3 medium tomatoes) [ ] 1 cup red onion (finely chopped, about ½ a medium onion) [ ] 1 medium red pepper (diced) [ ] ¼ cup fresh coriander (finely chopped) [ ] 2 tbsp fresh lime juice (all the juice from 1 lime) [ ] ½ tsp sea salt [ ] 1 habanero pepper (deseeded, finely chopped) Instructions [ ] 1. Dice the 2 large fresh mangoes into small, uniform cubes and place them in a large mixing bowl. Add the 1 cup diced fresh tomatoes to the bowl, cut to roughly the same size as the mango for a consistent texture. Finely chop the 1 cup red onion — pieces should be smaller than the mango and tomato — and add to the bowl. Remove the seeds and white membranes from the 1 medium red pepper, dice it, and add it to the bowl. Deseed and finely chop the 1 habanero pepper [ ] 2. wash hands thoroughly after handling and avoid touching your face. Add the habanero to the bowl according to your heat preference. Finely chop the ¼ cup fresh coriander leaves and add them to the bowl. Pour the 2 tbsp fresh lime juice evenly over the ingredients. Sprinkle the ½ tsp sea salt evenly over the mixture. Gently fold all the ingredients together with a large spoon until well combined and evenly distributed. Cover the bowl and refrigerate for at least 30 minutes to allow the flavours to meld. Taste and adjust the seasoning with additional salt or lime juice if needed.
