Ingredients
[ ] 240 g (1 cup) smooth sunflower seed butter (unsweetened, no added oil)
[ ] 60 ml (¼ cup) melted virgin coconut oil
[ ] 3 tbsp pure maple syrup
[ ] 60 g (¼ cup) roughly chopped toasted sunflower seeds or pumpkin seeds (pepitas), plus a little extra to scatter on top
[ ] ½ tsp flaky sea salt, plus extra to finish
[ ] 1 tsp vanilla extract (optional)

Instructions
[ ] 1. Line a small tin or loaf tin with baking paper, leaving enough overhang on the sides to lift the fudge out later.
[ ] 2. Add 240 g (1 cup) smooth sunflower seed butter (unsweetened, no added oil), 60 ml (¼ cup) melted virgin coconut oil, 3 tbsp pure maple syrup, ½ tsp flaky sea salt, and 1 tsp vanilla extract (if using) to a bowl and mix until fully combined and smooth.
[ ] 3. Fold in 60 g (¼ cup) roughly chopped toasted sunflower seeds or pumpkin seeds (pepitas).
[ ] 4. Pour the mixture into the prepared tin and spread it into an even layer.
[ ] 5. Scatter a little extra roughly chopped toasted sunflower seeds or pumpkin seeds over the top, then finish with a pinch of extra flaky sea salt.
[ ] 6. Freeze until completely solid.
[ ] 7. Lift the fudge out of the tin using the baking paper overhang, then slice into squares or fingers straight from the freezer.
