Nutritional Values
This blend is entirely plant-based and contains no animal ingredients; no swaps were required. Baharat is naturally free from the common allergens. The individual spices each contribute meaningful plant compounds: allspice and cloves are rich in eugenol, a potent antioxidant; black pepper contains piperine, which enhances the absorption of other nutrients; coriander and cumin provide iron and dietary fibre; cinnamon has been linked to supporting stable blood sugar; and nutmeg contributes manganese. Because the blend is used in small quantities as a seasoning, it adds flavour rather than macronutrients, and it contains negligible sodium unless salt is added separately.

Warm Lebanese Baharat Blend Seven warm spices — allspice, cinnamon, coriander, cumin, black pepper, cloves, and nutmeg — toasted and blended into a fragrant, rust-brown powder that perfumes your kitchen as you make it. This is the backbone of Lebanese cooking: earthy, gently sweet, and deeply aromatic. Keep a jar to hand and it will transform rice, lentils, stews, and roasted vegetables in seconds. Ingredients [ ] 1 tbsp allspice berries (or 1 tbsp ground allspice) [ ] 1 tbsp black peppercorns (or 1 tbsp ground black pepper) [ ] 1 tbsp coriander seeds (or 1 tbsp ground coriander) [ ] 1 tbsp cumin seeds (or 1 tbsp ground cumin) [ ] 1 tsp whole cloves (or 1 tsp ground cloves) [ ] 1 tsp ground cinnamon [ ] ½ tsp freshly grated nutmeg (or ½ tsp ground nutmeg) Instructions [ ] 1. If using whole spices, place a dry frying pan over a medium heat until it is hot to the touch. [ ] 2. Add the allspice berries, black peppercorns, coriander seeds, cumin seeds, and cloves to the dry pan in a single layer. [ ] 3. Toast, stirring constantly, for 2–3 minutes. [ ] 4. When the spices are fragrant and very lightly darkened — do not let them smoke or burn — tip them immediately onto a cold plate. [ ] 5. Leave the spices to cool completely. [ ] 6. When the spices are fully cool, transfer them to a spice grinder or pestle and mortar and grind to a fine powder. [ ] 7. Add the ground cinnamon and ground (or freshly grated) nutmeg to the ground spice powder. [ ] 8. Stir well until the blend is completely uniform in colour and texture. [ ] 9. If using pre-ground spices throughout, combine all the measured spices in a bowl. [ ] 10. Stir until evenly mixed — no toasting is needed. [ ] 11. Transfer the finished blend to a clean, dry, airtight glass jar. [ ] 12. Seal and label the jar with the date. [ ] 13. Store in a cool, dark place for up to 6 months — the aroma is strongest in the first 3 months. [ ] 14. Use 1–2 teaspoons per 4 servings — stir into rice pilafs, lentil soups, chickpea stews, roasted aubergine, cauliflower, or root vegetables, or use as a dry rub for tofu or tempeh before grilling. https://www.cuisinesavvy.com/recipe/warm-lebanese-baharat-blend
