Grilled Avocado with Hearts of Palm Ceviche

Ingredients
[ ] 2 large firm avocados, halved and pitted
[ ] 1 can (14 oz) hearts of palm, drained and diced
[ ] 1 cup cherry tomatoes, quartered
[ ] 1/4 cup red onion, finely diced
[ ] 1 serrano chile, seeded and minced
[ ] 1/4 cup fresh cilantro, chopped
[ ] 3 tablespoons fresh lime juice
[ ] 2 tablespoons coconut milk
[ ] 1/2 teaspoon sea salt
[ ] 1/4 teaspoon black pepper
[ ] 1 tablespoon olive oil for brushing

Instructions
[ ] 1. Preheat grill or grill pan to medium-high heat.
In a medium bowl, combine diced hearts of palm, cherry tomatoes, red onion, serrano chile, and cilantro.
Add lime juice, coconut milk, sea salt, and black pepper to the bowl
[ ] 2. toss gently to combine.
Let the ceviche marinate while you grill the avocados.
Brush the cut sides of all four avocado halves lightly with olive oil.
Place avocados cut-side down on the grill and cook for 2–3 minutes until grill marks appear and the avocados are slightly charred.
Remove avocados from the grill and let cool for 1–2 minutes.
Spoon the hearts of palm ceviche generously into each avocado half.
Serve immediately, garnished with extra cilantro and lime wedges if desired.
