Spicy Vegan Refried Pinto Beans

Smoky, spicy refried pinto beans made entirely plant-based with finely cooked onion, garlic, jalapeño, chipotle chile powder, and cumin. Finished with fresh lime juice and cilantro for a flavorful side dish or taco filling with the perfect partly mashed, spoonable texture.

Ingredients
[ ] 2 tablespoons olive oil or avocado oil
[ ] 1 medium yellow onion, finely diced
[ ] 3 cloves garlic, minced
[ ] 1 jalapeño, seeded and finely chopped
[ ] 1 teaspoon chipotle chile powder
[ ] 1 teaspoon ground cumin
[ ] 1/2 teaspoon salt
[ ] 2 cans (15 oz each) pinto beans, drained and rinsed
[ ] 3/4 cup vegetable broth
[ ] 2 tablespoons fresh lime juice
[ ] 1/4 cup fresh cilantro, chopped

Instructions
[ ] 1. Heat 2 tablespoons olive oil in a large skillet over medium heat.
Add the finely diced yellow onion and cook for 5–6 minutes, stirring occasionally, until softened and translucent.
Add the minced garlic and chopped jalapeño to the skillet. Cook for 1–2 minutes until fragrant.
Stir in the chipotle chile powder, ground cumin, and salt. Cook for 30 seconds to toast the spices.
Add the drained and rinsed pinto beans and 3/4 cup vegetable broth. Bring to a simmer and cook for 8–10 minutes, stirring occasionally, until the beans are heated through and the liquid has reduced slightly.
Using a potato masher or the back of a wooden spoon, mash about half of the beans, leaving the rest whole for a chunky, spoonable texture.
Remove from heat and stir in 2 tablespoons fresh lime juice and 1/4 cup chopped cilantro. Taste and adjust seasoning if needed.
Serve warm as a side dish, taco filling, or burrito component. The beans will thicken as they cool
