Vegan Mushroom Al Pastor Tacos with Garlic Lime Crema

These vibrant plant-based tacos feature meaty cremini and shiitake mushrooms marinated in a sweet-smoky al pastor sauce with fresh pineapple and chipotle peppers. Served in warm corn tortillas and topped with a tangy garlic lime crema made from unsweetened plant yogurt, creamy avocado, and fresh cilantro.

Ingredients
[ ] 1 lb cremini mushrooms, sliced
[ ] 8 oz shiitake mushrooms, stems removed and sliced
[ ] 1 cup fresh pineapple, diced (plus extra for serving)
[ ] 2-3 chipotle peppers in adobo, minced (plus 2 tbsp adobo sauce)
[ ] 3 cloves garlic, minced (divided)
[ ] 2 tbsp olive oil
[ ] 1 tbsp lime juice
[ ] 1 tsp ground cumin
[ ] 1 tsp smoked paprika
[ ] 1/2 tsp dried oregano
[ ] 1/4 tsp ground cinnamon
[ ] Salt and black pepper to taste
[ ] 8-12 corn tortillas
[ ] 1/2 cup unsweetened plant yogurt (such as coconut or soy)
[ ] 1 tbsp lime juice (for crema)
[ ] 1 clove garlic, minced (for crema)
[ ] 2 ripe avocados, sliced
[ ] 1/2 cup fresh cilantro, chopped
[ ] Lime wedges for serving
[ ] Optional: 1/4 cup crumbled tofu-cotija or vegan queso fresco

Instructions
[ ] 1. In a small bowl, whisk together the plant yogurt, 1 tbsp lime juice, and 1 minced garlic clove. Season with salt to taste. Refrigerate until ready to serve.
[ ] 2. In a blender or food processor, combine 1/2 cup diced fresh pineapple, chipotle peppers, adobo sauce, 2 minced garlic cloves, 1 tbsp lime juice, cumin, smoked paprika, oregano, cinnamon, 1 tbsp olive oil, salt, and pepper. Blend until smooth.
[ ] 3. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the sliced cremini and shiitake mushrooms and cook for 5–7 minutes, until they release their moisture and begin to brown.
[ ] 4. Pour the al pastor marinade over the mushrooms and stir to coat evenly. Add the remaining 1/2 cup diced pineapple.
[ ] 5. Cook for 8–10 minutes, stirring occasionally, until the sauce thickens and caramelizes on the mushrooms.
[ ] 6. Heat the corn tortillas in a dry skillet or directly over a gas flame until warm and slightly charred.
[ ] 7. Fill each tortilla with the mushroom al pastor mixture. Top with sliced avocado, a drizzle of garlic lime crema, and fresh cilantro. Add tofu-cotija or vegan queso fresco if using.
[ ] 8. Serve immediately with lime wedges and extra pineapple chunks.
